The Perfect Steak



Ingredients:

1. 1.5-2" Prime cut steak
2. Thyne
3. Kosher salt / black pepper
4. Garlic
5. Olive oil
6. Butter

Cooking directions:

1. Leave the steak out at room temperature for about 30 minutes. Cold steak will seize and will make it tough and not cook evenly.

2. Preheat the oven to 450 degrees.

3. Sear the steak on a large pan. Get the pan HOT before putting in the steak.
    a. dry pat the steak with a kitchen towel and add salt/pepper
    b. olive oil in
    c. steak in
    d. butter / crushed garlic / thyne in
    e. cook each side for about 3 minutes until golden brown crust appears, while using a spoon to pour the juices to the top of the steak
    f. don't forget to flip the steak to it's side and cook the side for about 1 minute

4. Put it inside the oven and cook for approximately 10 minutes. Flip after 5th minute. Monitor the temperature using a thermometer.

Temperatures

Rare = 120 degrees
Medium Rare = 130 degrees
Medium = 140 degrees

Once the temperature has been reached, let it rest on top of a cooking board for 10 minutes to let the steak re-absorb all the juices.
